LIBOKE YA TILAPIA

 
 
 
 

In my kitchen, there are two kinds of recipes I come up with: the first is a conceptual recipe, the second is born out of spontaneity and laziness.
Liboke Ya Tilapia belongs to the category spontaneous and lazy :-)
These kinds of recipes are usually born on Saturdays, when I simply can’t be bothered to go food shopping — until finally the supermarket around the corner has closed.
Damn and merde I say, what should I eat? I walk to the fridge slowly and cook a meal with whatever is there — et voilà:

 
 
 

TILAPIA COOKED IN BANANA LEAVES

- a 450 gramm tilapia
- 4 banana leaves
- half of a large piece of ginger
- 2 leeks
- a lime
- half a pili pili chilli 
- 260ml fortified wine
- a small onion
- a clove of garlic
- 2 tablespoons olive oil
- sea salt

Peel and finely chop the onion, ginger and garlic; deseed the pili pili and mince; wash leeks and finely chop. Zest and juice the lime. 

Wash the fish and score the skin with a sharp knife. Drape the banana leaves over a baking dish and place the fish in the middle. Add all other ingredients and salt to taste. Fold the banana leaves over the fish.

Bake for an hour at 150°C
